Rainy days and chicken soup...

It’s been cold and rainy here, the kind of weather that chills you to the bone. The best remedy I know for that is homemade soup and grilled ham and cheese sandwiches. Simple and delicious.
I had plenty of chicken stock on hand so I decided to make chicken soup this time ~ comforting and warming all in one. I like to cook the chicken separately while I cut up the carrots and celery to cook in the stock, seasoning as I go. Then I add the cooked chicken to the pot. I cook the pasta separately, too, and add it when I’m close to serving the soup so it doesn’t soak up all the broth. (And if you need to add a bit of water to the soup, just use some of the pasta water.) The great thing about homemade chicken soup is it is easy to make in any quantity ~ enough for one or two, or a pot full, as I made. And it smells heavenly cooking on the stove.
That’s my favorite way to beat cold, damp weather. What’s yours?

  1. That looks delish!! I totally love chicken noodle soup. My kids always tells me it reminds them of being sick. It is such a "mom's penicillen" kind of meal that I always make it when the flu hits our house.

My favorite soup, though, is a broccoli cheese soup. It's a "copy that" recipe...Food Network's version of Panera's broccoli cheese. It tastes exactly like Panera's!!

    Have a wonderful day.

  2. I am making chicken soup tonight! I add swiss chard to mine too. Your's looks delicious.

I also like to make black bean chili and corn bread on cold nights.

  3. Sounds great...it's a cold day here.
I am blog hopping & following you from Katherine's Corner. Growing Old With Grace http://growing-old-with-grace.blogspot.com/. Hugs, GraceinAZ

  4. Oh, I totally agree with you and your soup sounds delicious. We eat a Chicken Noodle soup but it is and old family recipe from my Great Aunt, she uses egg and cheese in it with small pasta, pastina. I have a feeling it is not all that healthy LOL

  5. I just love a good chicken soup too! And yes, there's nothing like it on a chilly, rainy day! I hope that you are enjoying the Christmas season!

  6. Rainy days and chicken soup--perfect for each other. Your soup looks wonderful, think I'll make some tonight.

  7. It looks delicious! It hasnt been too cold yet here in NY , but a bowl of soup is always welcome!
Sounds like you have everything under control for Christmas. Have a merry one!

  8. I love homemade chicken soup. I must confess,I'm not a great soup maker though.
I'm going to try your suggestion of cooking the pasta seperatly. Everything else I do the same as you.
Perhaps I will make some next week. Now I've got a hankering. :)

On cool, wet days I love to bake. Yummy cookies of course!
